Ingredients
- Sweet Potatoes: 2 cups, diced
- Green Lentils: 1 cup, rinsed
- Vegetable Broth: 4 cups
- Onion: 1, chopped
- Garlic: 3 cloves, minced
- Carrots: 1 cup, diced
- Celery: 1 cup, diced
- Ground Cumin: 1 tsp
- Ground Coriander: 1 tsp
- Olive Oil: 2 tbsp
- Salt: to taste
- Pepper: to taste
Instructions
- Prepare the vegetables by peeling and dicing the sweet potatoes, chopping the onion, and dicing the carrots and celery. Mince the garlic.
- Rinse the lentils under cold water and set aside.
- In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 5-7 minutes until softened. Stir in the garlic, cumin, and coriander, cooking for an additional 1-2 minutes.
- Add the diced sweet potatoes and rinsed lentils to the pot. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and let simmer for 25-30 minutes.
- If desired, blend the soup for a creamy texture using an immersion blender or a regular blender (let cool slightly before blending in batches).
