Ingredients

  • Sweet Potatoes: 2 medium, peeled and diced (about 2 cups)
  • Kale: 2 cups, chopped (stems removed)
  • Eggs: 6 large

  • Garlic: 2 cloves, minced
  • Feta Cheese: 1/2 cup, crumbled
  • Olive Oil: 2 tablespoons
  • Salt: 1 teaspoon (or to taste)
  • Pepper: 1/2 teaspoon (or to taste)

Instructions

  1. Peel and dice the sweet potatoes into small cubes and set aside.
  2. Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium heat. Add the diced sweet potatoes, season with salt and pepper, and cook for about 10-12 minutes until tender.
  3. Add the chopped onion and cook for another 3-4 minutes until translucent. Stir in the minced garlic and sauté for an additional minute.
  4. In a large bowl, whisk together the eggs, remaining tablespoon of olive oil, salt, and pepper.
  5. Stir in the chopped kale to the sweet potato mixture and cook for 2-3 minutes until wilted. Remove from heat and pour the egg mixture over the vegetables, stirring gently.
  6. Sprinkle crumbled feta cheese on top and transfer the skillet to a preheated oven at 375°F (190°C). Bake for 20-25 minutes until the eggs are set and the top is golden.
  7. Let cool for a few minutes, slice into wedges, and serve warm or at room temperature.
