Ingredients
- Sweet Potatoes: 2 medium, peeled and diced (about 2 cups)
- Kale: 2 cups, chopped (stems removed)
- Eggs: 6 large

- Garlic: 2 cloves, minced
- Feta Cheese: 1/2 cup, crumbled
- Olive Oil: 2 tablespoons

Instructions
- Peel and dice the sweet potatoes into small cubes and set aside.
- Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium heat. Add the diced sweet potatoes, season with salt and pepper, and cook for about 10-12 minutes until tender.
- Add the chopped onion and cook for another 3-4 minutes until translucent. Stir in the minced garlic and sauté for an additional minute.
- In a large bowl, whisk together the eggs, remaining tablespoon of olive oil, salt, and pepper.
- Stir in the chopped kale to the sweet potato mixture and cook for 2-3 minutes until wilted. Remove from heat and pour the egg mixture over the vegetables, stirring gently.
- Sprinkle crumbled feta cheese on top and transfer the skillet to a preheated oven at 375°F (190°C). Bake for 20-25 minutes until the eggs are set and the top is golden.
- Let cool for a few minutes, slice into wedges, and serve warm or at room temperature.
