  • Bell pepper: 1 medium (any color), chopped
  • Vegetable broth: 4 cups
  • Cumin: 2 teaspoons
  • Chili powder: 2 tablespoons
  • Salt: to taste
  • Pepper: to taste
  • Olive oil: 1 tablespoon (for sautéing)
  • Fresh cilantro: 1/4 cup, chopped (for garnish)

Instructions

  1. Peel and dice the sweet potatoes, chop the onion and bell pepper, and mince the garlic.
  2. In a large pot, heat olive oil over medium heat and sauté the onion and bell pepper for 5-7 minutes until soft.
  3. Add minced garlic and cook for an additional minute.
  4. Add diced sweet potatoes, cumin, chili powder, salt, and pepper, stirring to combine.
