Ingredients

- Bell pepper: 1 medium (any color), chopped
- Vegetable broth: 4 cups
- Cumin: 2 teaspoons
- Chili powder: 2 tablespoons

Instructions
- Peel and dice the sweet potatoes, chop the onion and bell pepper, and mince the garlic.
- In a large pot, heat olive oil over medium heat and sauté the onion and bell pepper for 5-7 minutes until soft.
- Add minced garlic and cook for an additional minute.
- Add diced sweet potatoes, cumin, chili powder, salt, and pepper, stirring to combine.
- Pour in vegetable broth, add black beans and diced tomatoes, and stir well.
- Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes.
- Taste and adjust seasoning as needed, then serve garnished with fresh cilantro.
Notes
