Sweet Potato Black Bean Burrito Bowls are a delicious and nutritious meal option that combines roasted sweet potatoes, hearty black beans, and fluffy brown rice, topped with fresh ingredients.

Ingredients

  • Sweet potatoes: 2 medium, peeled and diced
  • Black beans: 1 can (15 oz), drained and rinsed
  • Brown rice: 1 cup, uncooked
  • Avocado: 1 large, sliced
  • Corn: 1 cup (fresh, frozen, or canned)
  • Lime juice: 2 tablespoons (freshly squeezed)
  • Cumin: 1 teaspoon
  • Chili powder: 1 teaspoon
  • Fresh cilantro: 1/4 cup, chopped
  • Olive oil: 2 tablespoons
  • Salt and pepper: to taste
  • Tortilla strips: 1 cup (store-bought or homemade)

Instructions

  1. Preheat your oven to 425°F (220°C). Peel and dice the sweet potatoes into small cubes.
  2. Toss the diced sweet potatoes with 1 tablespoon of olive oil, cumin, chili powder, salt, and pepper on a baking sheet. Spread them out in a single layer.
  3. Roast the sweet potatoes in the oven for about 25-30 minutes, stirring halfway through.
  4. In a small saucepan, combine the drained black beans with 1 cup of corn and a pinch of salt. Heat over medium heat for about 5-7 minutes.
  5. In each serving bowl, start with a base of fluffy brown rice, then add the roasted sweet potatoes, followed by the black beans and corn mixture.
  6. Top with slices of avocado, drizzle with lime juice, sprinkle with cilantro, and add tortilla strips for crunch.

Notes

  • For added flavor, marinate the sweet potatoes in lime juice and spices before roasting.
  • Use fresh ingredients for the best taste.
  • Experiment with spices to customize the flavor.
  • Rinse brown rice before cooking for fluffiness.
  • Keep components warm in the oven if preparing ahead of time.
