  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar (100g)
  • 1/4 cup brown sugar (50g)
  • 3 large eggs
  • 1/2 cup unsalted butter, melted (115g)
  • 1/2 cup whole milk (120ml)
  • 1 teaspoon vanilla extract
  • 1/2 cup water (120ml)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a saucepan, simmer chopped dates with 120ml water for 5–7 minutes until soft. Let cool.
  3. In a large bowl, sift together flour, baking powder, baking soda, cinnamon, cardamom, and salt.
  4. In another bowl, beat granulated sugar, brown sugar, and eggs until light and fluffy.
  5. Add melted butter, milk, and vanilla to the egg mixture. Mix well.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Fold in the softened dates and chopped pistachios evenly.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 30–35 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
