Ingredients
- Chicken thighs: 1.5 lbs (about 680 grams), boneless and skinless
- Sweet chili sauce: 1/2 cup (approximately 120 ml)
- Garlic: 4 cloves, minced
- Fresh ginger: 1 tablespoon, grated
- Soy sauce: 2 tablespoons (approximately 30 ml)
- Lime juice: 2 tablespoons (approximately 30 ml)
- Sesame oil: 1 tablespoon (approximately 15 ml)
- Green onions: 2, sliced (for garnish)
- Salt and pepper: to taste
- Cooking oil: 1 tablespoon (for frying)
Instructions
- Prepare the marinade by combining sweet chili sauce, minced garlic, grated ginger, soy sauce, lime juice, sesame oil, salt, and pepper in a large bowl.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours.
- If making homemade sweet chili sauce, combine equal parts of sugar and vinegar with chili flakes in a saucepan, heat until sugar dissolves, and let cool.
- Heat cooking oil in a large skillet over medium-high heat. Add the marinated chicken thighs and cook for 5-7 minutes on each side until browned and cooked through (internal temperature should reach 165°F or 75°C).
- Pour the reserved marinade into the skillet and simmer for 3-5 minutes until the sauce thickens and coats the chicken.
- Transfer the chicken to a serving platter, drizzle with sauce, and garnish with sliced green onions. Serve warm with steamed rice or noodles.
