  • Garlic: 4 cloves, minced
  • Fresh ginger: 1 tablespoon, grated
  • Soy sauce: 2 tablespoons (approximately 30 ml)
  • Lime juice: 2 tablespoons (approximately 30 ml)
  • Sesame oil: 1 tablespoon (approximately 15 ml)
  • Green onions: 2, sliced (for garnish)
  • Salt and pepper: to taste
  • Cooking oil: 1 tablespoon (for frying)

Instructions

  1. Prepare the marinade by combining sweet chili sauce, minced garlic, grated ginger, soy sauce, lime juice, sesame oil, salt, and pepper in a large bowl.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours.
  3. If making homemade sweet chili sauce, combine equal parts of sugar and vinegar with chili flakes in a saucepan, heat until sugar dissolves, and let cool.
  4. Heat cooking oil in a large skillet over medium-high heat. Add the marinated chicken thighs and cook for 5-7 minutes on each side until browned and cooked through (internal temperature should reach 165°F or 75°C).
  5. Pour the reserved marinade into the skillet and simmer for 3-5 minutes until the sauce thickens and coats the chicken.
  6. Transfer the chicken to a serving platter, drizzle with sauce, and garnish with sliced green onions. Serve warm with steamed rice or noodles.
