- ⅓ cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/4 teaspoon salt
- 1 large egg yolk
- 2 to 4 tablespoons cold water
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 2 cups fresh strawberries, hulled and halved
- Optional: 1 tablespoon apricot jam (for glaze)
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, combine flour, powdered sugar, and salt. Add cold butter and mix until the mixture resembles coarse crumbs. Add egg yolk and cold water, then form dough. Press dough into tart pan, prick bottom, and bake for 15-20 minutes or until golden brown. Let cool.
- In a separate bowl, beat cream cheese and powdered sugar until smooth. Gradually add heavy cream and vanilla extract, mixing until thickened and holding peaks.
- Spread the cream filling over the cooled crust, creating a barrier between the crust and strawberries.
- Arrange halved strawberries on top of the cream filling. If using apricot jam, heat it and drizzle over the strawberries for a shiny finish.

- Do not overwork the dough to avoid a tough crust.
- Ensure the tart crust is completely cooled before adding the filling to avoid melting the cream.
