  • 2 Tbsp cornstarch
  • 1 3/4 cups all-purpose flour
  • 2 tsp baking powder
  • Pinch of salt
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1 tsp pure vanilla extract
  • Vanilla ice cream, for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 12-inch oven-safe skillet. Line the bottom with parchment paper and grease again.
  2. In a bowl, toss sliced strawberries with brown sugar and cornstarch until evenly coated. Spread evenly in the prepared skillet.
  3. In another bowl, whisk flour, baking powder, and salt.
  4. In a large mixing bowl, whisk together granulated sugar, eggs, sour cream, melted butter, and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
