Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon sparkling sugar (optional)

Instructions

  1. Line a baking sheet with parchment paper. Mix cream cheese, confectioners sugar, and lemon zest until smooth. Scoop into 12 small balls and freeze for 30 minutes.
  2. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper and spray lightly with cooking spray.
  3. Toss strawberries with lemon juice and 1 tablespoon sugar. Let sit for 10 minutes, then drain excess liquid.
  4. Whisk together flour, baking powder, and salt in a bowl.
  5. In another bowl, beat butter, brown sugar, and remaining granulated sugar until fluffy. Add egg and vanilla; mix well.
  6. Gradually mix dry ingredients into the wet mixture until just combined. Gently fold in the strawberries.
  7. Scoop dough onto baking sheets. Flatten each, place a frozen cream cheese ball on top, cover with more dough, and seal.
  8. Optional: Roll into balls and sprinkle with sparkling sugar. Freeze cookies again for 30 minutes.
  9. Bake for 18 minutes or until golden. Cool on a wire rack before serving.
