Description

  • 3 super ripe bananas, mashed

Instructions

  1. Preheat the oven to 350°F (175°C). Butter and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a separate bowl, combine 3/4 cup sugar, melted butter, buttermilk, vanilla, egg, and egg yolk. Mix until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the mashed bananas and sliced strawberries.
  6. To make the crumb topping, combine remaining 1/2 cup flour, 1/4 cup sugar, 1/2 cup softened butter, and a pinch of salt. Mix until crumbly.
  7. Pour the batter into the prepared pan and sprinkle crumb topping evenly over the top.
  8. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for at least 10 minutes before removing.
  10. Serve slices warm with whipped cream and extra strawberries if desired.
