Description
Strawberry Ritz Cake is a no-bake summer dessert made with fresh strawberries, cream cheese, whipped cream, and buttery Ritz crackers.

- 1 lb fresh strawberries, trimmed, rinsed, and patted dry
- 8 oz cream cheese, softened
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 sleeve (about 38) butter crackers, such as Ritz
Instructions
- Puree half the strawberries in a blender or food processor. Finely chop the remaining strawberries and set both aside.
- In a large bowl, beat softened cream cheese, heavy cream, and powdered sugar with an electric mixer until stiff peaks form.
- Fold the strawberry puree gently into the whipped cream mixture until combined without overmixing.
- In a 9-inch springform pan, place a single layer of Ritz crackers. Top with chopped strawberries and a third of the strawberry cream mixture. Repeat the layering process two more times.
- Finish with the remaining cream layer on top. Garnish with whole Ritz crackers and chopped strawberries.
- Cover the cake with plastic wrap and refrigerate overnight to set.
