Description
Strawberry Rhubarb Pie combines sweet strawberries and tart rhubarb in a buttery, flaky crust, perfect for spring and summer celebrations.

- For the Pie Crust:
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter (cold, cubed)
- 1 tsp salt
- 2 tbsp sugar
- 6–8 tbsp ice water
- For the Filling:
- 2 cups fresh strawberries (sliced)
- 2 cups rhubarb (chopped into ½-inch pieces)
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1 tbsp lemon juice
- 1 tbsp butter (to dot)
- 1 egg (beaten, for egg wash)
Instructions
- Prepare the pie crust by combining flour, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs. Add ice water gradually, mixing until the dough forms. Divide into two disks, wrap in plastic, and refrigerate for at least one hour.
- Prepare the filling by mixing sliced strawberries, chopped rhubarb, sugar, cornstarch, and lemon juice in a bowl. Let sit for 15-20 minutes to draw out the fruit juices.
- Roll out one disk of dough on a floured surface to fit a 9-inch pie pan. Press the dough into the pan and trim excess. Fill with the prepared strawberry rhubarb mixture and dot with butter.
- Roll out the second disk of dough and cover the pie. Seal the edges and cut slits in the top to allow steam to escape. Bake at 425°F (220°C) for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 30-40 minutes until golden brown and bubbly. Allow to cool before serving.
Notes
- Be sure to let the pie cool before slicing to allow the filling to set.
- If the pie filling seems too runny, add more cornstarch or cook longer.
- For a healthier twist, use whole wheat flour for the crust or coconut sugar for the filling.
- For a flakier crust, handle the dough as little as possible and use cold ingredients.
