Description
Strawberry and Raspberry Sorbet is a refreshing frozen dessert that combines the sweet and tart flavors of summer berries into a smooth, vibrant treat. Perfect for hot days or as a light finish to any meal.
Ingredients
Scale
- 3 pounds strawberries, tops removed and halved
- 2 pounds raspberries
- 2 cups granulated sugar
- 1 tablespoon lemon juice
- 1/4 teaspoon kosher salt
- 3/4 cup water
Instructions
- Blend halved strawberries in a food processor until smooth. Strain the puree through a fine mesh strainer to remove solids.
- Transfer 4 cups of strawberry puree to a large bowl. Add granulated sugar, lemon juice, and kosher salt. Stir until sugar is dissolved.
- Refrigerate the mixture for at least 2 hours until fully chilled.
- Churn the chilled mixture in an ice cream maker according to manufacturer’s instructions, about 20 minutes, until smooth and creamy.
- Transfer the sorbet to a freezer-safe container, smooth the top, and cover tightly. Freeze until solid, at least 2 hours.
Notes
- Use ripe, sweet strawberries and tart raspberries for best flavor.
- Don’t skip chilling the mixture—it helps with smooth churning.
- You can substitute other berries like blackberries or blueberries.
- Straining the puree ensures a smooth, creamy texture.
