Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a small saucepan over low heat, combine strawberries, granulated sugar, cornstarch, and lemon juice. Cook, stirring frequently, until thickened (~10 minutes).
  3. Roll out one batch of pie dough on a floured surface to fit a 9-inch cast iron skillet. Press dough into skillet, covering bottom and sides.
  4. Pour thickened strawberry filling into prepared crust.
  5. Roll out second batch of pie dough and cover filling completely. Cut four slits in the center for steam to escape.
  6. Trim excess dough, leaving a 1-inch overhang. Fold top crust edges over bottom crust and crimp edges with a fork.
  7. Bake pie for 25-30 minutes or until crust is golden brown.
  8. Cool on a wire rack for 20-25 minutes.
  9. Whisk confectioners’ sugar, milk, and vanilla to make glaze. Adjust milk for desired consistency.
  10. Drizzle glaze over cooled pie and sprinkle with sprinkles if desired.
  11. Chill pie in refrigerator 1-2 hours until glaze is set before serving.
