Description

Strawberry Pop-Tart Blondies are soft, buttery dessert bars layered with strawberry jam, sweet glaze, and sprinkles—perfect for parties or casual snacking.

Ingredients

Scale
  • Cooking spray
  • 1 1/4 cups packed light brown sugar
  • 3/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon kosher salt
  • 2 cups all-purpose flour
  • 1 cup strawberry jam
  • 1 cup powdered sugar
  • 1 to 2 tablespoons whole milk
  • Sprinkles for decorating

Instructions

  1. Preheat oven to 350°F and grease an 8×8-inch baking pan with cooking spray. Line with parchment paper for easy removal.
  2. In a large bowl, whisk together brown sugar and melted butter. Add granulated sugar and whisk until smooth.
  3. Whisk in eggs, vanilla extract, and salt until fully combined.
  4. Gradually stir in the flour until just combined; do not overmix.
  5. Spread 1 1/2 cups of batter evenly into the prepared pan. Dollop strawberry jam on top and spread gently.
  6. Dollop remaining batter over the jam and smooth gently without mixing layers.
  7. Bake for 45–50 minutes until the edges are golden and a toothpick inserted comes out with moist crumbs.
  8. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  9. Whisk powdered sugar with milk to form glaze. Add more milk as needed for consistency.
  10. Drizzle glaze over cooled blondies and add sprinkles. Let set for 1 hour before slicing and serving.

Notes

  • Do not overmix the batter to avoid dense blondies.
  • Use parchment paper to make removal and slicing easier.
  • You can substitute other jam flavors or add chocolate chips for variation.
  • Let blondies cool completely before glazing to avoid melting the glaze.
