  • 250 ml heavy cream (about 1 cup)
  • 2 tablespoons gelatin powder
  • 60 ml water (about 1/4 cup)
  • 300 grams fresh strawberries, hulled and sliced (about 2 cups)
  • 200 grams strawberry jelly (about 1 cup)

Instructions

  1. Preheat your oven to 180°C (350°F). Combine graham cracker crumbs and melted butter in a bowl and mix well. Press into the bottom of a 9-inch springform pan and bake for 10 minutes. Let cool.
  2. In a large bowl, beat softened cream cheese until smooth. Gradually add granulated sugar and mix until well combined. Add vanilla extract.
  3. In a small bowl, sprinkle gelatin over water and let sit for 5 minutes. Heat until dissolved, then let cool slightly before adding to the cream cheese mixture.
  4. Gently fold whipped cream into the cream cheese mixture, then fold in the dissolved gelatin. Pour over the cooled crust and smooth the top.
  5. Refrigerate for at least 4 hours until set. Heat strawberry jelly until pourable, cool slightly, then pour over the cheesecake. Chill for an additional 1-2 hours before serving.
