- 1 cup unsalted butter, softened (227 grams)
- 1 cup granulated sugar (200 grams)
- 1 cup brown sugar, packed (220 grams)
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour (360 grams)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips (optional)
- 2 cups strawberry ice cream
- Fresh strawberries, chopped
- Powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- If desired, fold in chocolate chips.
- Drop spoonfuls of dough onto a baking sheet and bake for 10-12 minutes or until lightly golden around the edges.
- Let the cookies cool completely.
- If making homemade strawberry ice cream, blend fresh strawberries until smooth, then mix in cream, sugar, and lemon juice, and churn in an ice cream maker.
- Assemble the sandwiches by placing a scoop of strawberry ice cream between two cookies.
- Freeze the assembled sandwiches for about 30 minutes before serving.
- Dust with powdered sugar and garnish with fresh strawberries before serving.
