  • 1 cup brown sugar, packed (220 grams)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour (360 grams)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (optional)
  • 2 cups strawberry ice cream
  • Fresh strawberries, chopped
  • Powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. If desired, fold in chocolate chips.
  6. Drop spoonfuls of dough onto a baking sheet and bake for 10-12 minutes or until lightly golden around the edges.
  7. Let the cookies cool completely.
  8. If making homemade strawberry ice cream, blend fresh strawberries until smooth, then mix in cream, sugar, and lemon juice, and churn in an ice cream maker.
