- 1 cup crushed strawberry-flavored cookies (like Golden Oreos or Nilla Wafers)
- ½ cup chopped pecans or walnuts (optional)
- ¼ cup sugar
- 1 tablespoon unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan. Bake for 8-10 minutes and cool.
- Beat cream cheese until smooth, then mix in sugar, eggs, vanilla extract, and mashed strawberries. Pour the filling into the cooled crust and smooth the top. Bake for 45-55 minutes, until the edges are set and the center is slightly jiggly. Let it cool in the oven for 1 hour.
- In a small bowl, combine crushed cookies, chopped nuts, sugar, and melted butter. Once cheesecake has cooled, sprinkle the topping over it. Chill in the refrigerator for at least 4 hours, or overnight.
