- 3/4 cup rolled oats (quick-cooking is fine)
- 3/4 cup plain/all-purpose flour
- 3/4 cup brown sugar (loosely packed)
- 1/2 tsp baking powder
- 3/4 tsp cinnamon powder
- Pinch of salt
- 90g (6 tbsp) unsalted butter, melted
- 1 kg (2 lb) ripe strawberries
- 2 1/2 tbsp cornflour/cornstarch
- 1/3 – 1/2 cup white sugar (depending on the sweetness of the strawberries)
- 2 tbsp water
- 1 tsp vanilla extract
Instructions
- Preheat oven to 180°C (350°F).
- Prepare the topping by combining oats, flour, brown sugar, baking powder, cinnamon, and salt in a bowl.
- Mix in melted butter until the topping resembles coarse crumbs.
- Hull and cut strawberries, leaving smaller ones whole and halving larger ones.
- Mix the strawberries with cornstarch, sugar, water, and vanilla extract in a bowl.
- Transfer the strawberry mixture into a baking dish and top with the crumble mixture.
- Bake for 30 to 40 minutes, until the topping is golden brown and the strawberry syrup is bubbling.
- Let the crumble stand for a few minutes before serving with vanilla ice cream, whipped cream, or custard.
Notes
- Frozen strawberries can be used in place of fresh, but expect a runnier filling.
- For a crunchier topping, add chopped nuts or use more oats.
