Description

Strawberry Chocolate Mousse Cake is a no-bake layered dessert with an Oreo crust, rich chocolate mousse, and fresh strawberries, topped with smooth ganache and chocolate shavings.

  • 24 Oreos, crushed
  • 6 tablespoons butter, melted
  • Pinch of kosher salt
  • 2 teaspoons gelatin
  • 2 ½ tablespoons cold water
  • 2 ¼ cups semisweet chocolate chips
  • 3 cups heavy cream, divided
  • ½ cup powdered sugar
  • 2 quarts strawberries, stems removed
  • ⅔ cup heavy cream (for ganache)
  • 2 cups semisweet chocolate chips (for ganache)
  • Chocolate shavings (for topping)

Instructions

  1. Grease an 8-inch springform pan with cooking spray. In a bowl, mix crushed Oreos, melted butter, and salt. Press into the bottom of the pan and set aside.
  2. In a small bowl, mix gelatin and cold water. Let sit for 5–10 minutes. Heat 1 cup of heavy cream until simmering and stir in gelatin until dissolved.
  3. Pour the warm cream mixture over 2 ¼ cups chocolate chips. Stir until smooth. Let cool slightly, stirring occasionally.
  4. In a separate bowl, whip 2 cups of heavy cream and powdered sugar until stiff peaks form. Stir ¼ cup of whipped cream into the chocolate mixture, then gently fold in the rest until combined.
  5. Spread a thin layer of mousse over the crust. Place halved strawberries around the inner edge of the pan. Pipe or spoon in the remaining mousse, covering the berries. Smooth the top and refrigerate 4–6 hours until set.
  6. For the ganache, heat ⅔ cup heavy cream until warm, then pour over 2 cups chocolate chips. Let sit 3 minutes, then stir until smooth. Chill for 15 minutes.
  7. Spread ganache over the chilled cake. Top with chocolate shavings. Chill until ready to serve.

  • Use a warm knife for cleaner slices.
  • Chill the mousse cake for at least 4 hours, ideally overnight, for the best texture.
