Ingredients

  • 200 grams graham cracker crumbs (about 2 cups)
  • 100 grams unsalted butter, melted (about 1/2 cup)
  • 600 grams cream cheese, softened (about 21 oz)
  • 150 grams granulated sugar (about 3/4 cup)
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 240 grams sour cream (about 1 cup)
  • 250 grams fresh strawberries, hulled and sliced (about 2 cups)
  • 50 grams granulated sugar (for strawberry topping, optional) (about 1/4 cup)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Combine graham cracker crumbs and melted butter in a mixing bowl.
  3. Press the crumb mixture into the bottom of a 9-inch springform pan and bake for 10 minutes.
  4. Let the crust cool completely.
  5. Beat the softened cream cheese until smooth, then gradually add granulated sugar.
  6. Add vanilla extract and mix, then incorporate eggs one at a time.
  7. Add sour cream and mix until smooth.
  8. Prepare the strawberry topping by slicing fresh strawberries and mixing with sugar.
  9. Pour the cheesecake filling over the cooled crust and smooth the top.
  10. Bake for 50-60 minutes until edges are set and center is slightly jiggly.
  11. Turn off the oven and let the cheesecake cool inside for an hour.
  12. Chill in the refrigerator for at least 4 hours or overnight.
  13. Top with prepared strawberries before serving.
