- 3 large eggs
- 240 grams sour cream (about 1 cup)
- 250 grams fresh strawberries, hulled and sliced (about 2 cups)
- 50 grams granulated sugar (for strawberry topping, optional) (about 1/4 cup)
Instructions
- Preheat your oven to 180°C (350°F).
- Combine graham cracker crumbs and melted butter in a mixing bowl.
- Press the crumb mixture into the bottom of a 9-inch springform pan and bake for 10 minutes.
- Let the crust cool completely.
- Beat the softened cream cheese until smooth, then gradually add granulated sugar.
- Add vanilla extract and mix, then incorporate eggs one at a time.
- Add sour cream and mix until smooth.
- Prepare the strawberry topping by slicing fresh strawberries and mixing with sugar.
- Pour the cheesecake filling over the cooled crust and smooth the top.
- Bake for 50-60 minutes until edges are set and center is slightly jiggly.
- Turn off the oven and let the cheesecake cool inside for an hour.
- Chill in the refrigerator for at least 4 hours or overnight.
- Top with prepared strawberries before serving.
