Description

- 4 oz cream cheese, softened
- 1 Tbsp sugar
- 2 large flour tortillas
- 2 Tbsp butter, melted
- 1 Tbsp cinnamon sugar
- 1 cup chopped strawberries
- 1 Tbsp cornstarch
Instructions
- In a stand mixer, beat the softened cream cheese for 2–3 minutes until smooth. Add sugar and mix for 1 more minute until fluffy.
- Spread the cream cheese mixture over one tortilla, then top with the second tortilla to form a sandwich.
- Brush both sides of the quesadilla with melted butter and sprinkle with cinnamon sugar.
- Heat a skillet over medium heat and cook the quesadilla for 5 minutes per side, until golden and crispy.
- While cooking the quesadilla, heat the chopped strawberries in a small pot over low heat for about 5 minutes until bubbly.
- Stir in cornstarch and cook for another minute until the sauce thickens. Remove from heat.
- Slice the cooked quesadilla into wedges and drizzle with warm strawberry sauce before serving.
