Ingredients

  • 1 ½ cups fresh strawberries, chopped
  • For the Cheesecake Filling:
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin pan with paper liners or grease it with non-stick spray.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix well.
  3. In a separate bowl, whisk the egg, milk, vegetable oil, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the chopped strawberries.
  5. Prepare the cheesecake filling by beating cream cheese and sugar until smooth. Add the egg and vanilla extract, and mix until well combined.
  6. Spoon about two-thirds of the muffin batter into each muffin cup, then add a tablespoon of the cheesecake filling. Top with a bit more batter, leaving space at the top.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Allow the muffins to cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
