Description

Strawberry Cheesecake Chimichangas are a crispy, golden dessert filled with sweet cream cheese and fresh strawberries, then rolled in cinnamon sugar and drizzled with melted chocolate.


Ingredients

  • 4 oz cream cheese, softened
  • 1 tsp lemon zest
  • 1 Tbsp sugar
  • 1/2 tsp pure vanilla extract
  • 4 flour tortillas
  • 2 cups chopped strawberries
  • 2 Tbsp butter, divided
  • 2 cups cinnamon sugar
  • Melted chocolate for drizzling

Instructions

  1. In a bowl, mix cream cheese, lemon zest, sugar, and vanilla extract until smooth.
  2. Lay tortillas flat and spread the cream cheese mixture over each, leaving a 1/2 inch border.
  3. Top with chopped strawberries, then roll each tortilla burrito-style to seal the filling.
  4. Heat 1 Tbsp butter in a skillet over medium heat. Add chimichangas and cook 4 minutes per side until golden and crispy.
  5. Immediately roll cooked chimichangas in cinnamon sugar to coat thoroughly.
  6. Repeat with remaining chimichangas, adding more butter as needed.
  7. Drizzle with melted chocolate and serve warm.
