Description
Strawberry Cheesecake Bars combine the creamy richness of cheesecake with the sweet flavor of fresh strawberries. Perfect for any occasion.
Ingredients
Scale
- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 16 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, sliced
Instructions
- Preheat your oven to 325°F (160°C). Grease a 9×9-inch baking pan.
- Combine the graham cracker crumbs, melted butter, and granulated sugar in a bowl. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes and set aside to cool.
- In a large bowl, beat the softened cream cheese until smooth. Add sugar, eggs one at a time, and vanilla extract. Mix until well incorporated.
- Pour the cheesecake filling over the cooled crust and spread evenly. Top with fresh strawberry slices.
- Bake at 325°F (160°C) for 25-30 minutes, or until the cheesecake is set but slightly jiggly in the center. Let cool in the oven for 10 minutes, then cool completely at room temperature.
- Refrigerate for at least 4 hours or overnight before cutting into bars and serving.
Notes
- Be careful not to overbake the cheesecake; it should still be slightly jiggly in the center.
- Chill the bars completely for the best texture.
- You can substitute Oreo crumbs for the graham cracker crust for a different flavor.
- For a dairy-free option, use vegan cream cheese and a butter substitute.
