Description

Strawberry Charlotte Cake is a classic, elegant dessert featuring ladyfingers and creamy strawberry mousse, perfect for celebrations or a refreshing treat.


Ingredients

  • 1 tablespoon gelatin powder
  • 40 ladyfingers
  • 450 g whipping cream
  • 40 g powdered sugar
  • 1 teaspoon vanilla extract
  • 700 g strawberries, finely diced
  • 8 whole strawberries for topping

Instructions

  1. Bloom gelatin: sprinkle gelatin powder over 60 g cold water; let sit 10 minutes.
  2. Line a 9-inch springform pan with parchment or acetate. Trim 23 ladyfingers and arrange vertically around pan, then line bottom with ladyfingers.
  3. Scatter 200 g diced strawberries over ladyfingers.
  4. Whip 450 g whipping cream with powdered sugar and vanilla until stiff peaks form. Reserve 100 g whipped cream for decorating.
  5. Microwave bloomed gelatin for 15 seconds to melt. Blend 250 g diced strawberries with melted gelatin until pureed.
  6. Fold strawberry puree into whipped cream gently until uniform.
  7. Pour half the mousse over strawberry layer, smooth. Add another ladyfinger layer, scatter remaining diced strawberries, then pour remaining mousse and smooth.
  8. Pipe reserved whipped cream on top edge; decorate with whole strawberries.
  9. Chill cake in refrigerator at least 6 hours or overnight until set.
