Description
Strawberry blondies offer a delightful combination of buttery blondie texture and sweet, slightly tart strawberry flavor in a chewy, golden bar.
Ingredients
Scale
- 1 cup unsalted butter (melted)
- 1 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh strawberries (hulled and diced)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan by lining it with parchment paper.
- Mix the melted butter, brown sugar, and granulated sugar until smooth and creamy.
- Add the eggs one at a time, followed by the vanilla extract. Stir well to combine.
- In a separate bowl, combine the flour, baking powder, and salt, then fold into the wet ingredients until just combined.
- Gently fold in the diced strawberries, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared pan, spreading evenly. Bake for 25-30 minutes until golden at the edges and a toothpick comes out clean.
- Allow the blondies to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely. Slice and serve!
Notes
- Use fresh strawberries for the best flavor. Frozen strawberries should be thawed and drained well.
- If making a vegan version, substitute eggs with flax eggs and use coconut oil instead of butter.
- Don’t overmix the batter to keep the blondies tender and soft.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
