Description

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/3 cup milk (cold, dairy or non-dairy)
  • 1 large egg (cold)
  • 1 teaspoon pure vanilla extract
  • Coarse sugar (optional, for topping)
  • 1 cup confectioners’ sugar (for icing)
  • 23 tablespoons milk or heavy cream (for icing)
  • 1/4 teaspoon pure vanilla extract (for icing)
  • 1 heaping tablespoon strawberry jam (optional, for icing)

Instructions

  1. Chop strawberries into small pieces. Blot with a clean towel to remove excess moisture and optionally chill them.
  2. In a large bowl, mix flour, sugar, baking powder, and salt until well combined.
  3. Add cubed cold butter and cut it into the dry mixture until it resembles coarse crumbs.
  4. In a separate bowl, whisk together milk, egg, and vanilla extract. Pour into dry ingredients and fold gently to combine.
  5. Carefully fold in chilled strawberries. Do not overmix.
  6. Chill the dough for at least 45 minutes.
  7. Preheat oven to 375°F (191°C) and line baking sheets with parchment paper.
  8. Scoop dough into tablespoon-sized balls, place on baking sheet, and optionally top with extra strawberries and coarse sugar.
  9. Bake for 15–16 minutes or until edges are lightly golden.
  10. Let cookies cool for 5 minutes on the tray before transferring to a wire rack.
  11. Prepare icing by mixing confectioners’ sugar, milk or cream, vanilla extract, and optional strawberry jam until smooth.
  12. Once cookies are cooled, drizzle with icing and serve.
