Ingredients

  • 200g pitted dates, chopped
  • 1 tsp baking soda
  • 250ml boiling water
  • 100g unsalted butter, softened
  • 150g light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 180g all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 100g chopped walnuts

For the Orange Toffee Sauce:

  • 100g unsalted butter
  • 150g dark brown sugar
  • 100ml double cream
  • Zest and juice of 1 large orange
  • 1 tsp vanilla extract

Instructions

  1. Prepare the dates by sprinkling them with baking soda and soaking in boiling water for 10-15 minutes.
  2. Chop the walnuts and set aside.
  3. Cream the softened butter and light brown sugar until light and fluffy, then add eggs one at a time and mix well.
  4. Stir in the vanilla extract and soaked dates with their liquid.
  5. In a separate bowl, whisk together flour, baking powder, and salt, then fold into the wet mixture gently.
  6. Add the chopped walnuts and fold until evenly distributed.
  7. Pour the batter into a prepared cake pan and smooth the top.
  8. Bake in a preheated oven at 170°C (340°F) for 50-55 minutes, checking for doneness with a skewer.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. For the sauce, melt butter in a saucepan, add dark brown sugar, and stir until dissolved.
  11. Pour in double cream, add orange zest and juice, and simmer for 3-5 minutes until thickened.
  12. Serve the cake with warm orange toffee sauce drizzled on top.
