- 200g pitted dates, chopped
- 1 tsp baking soda
- 250ml boiling water
- 100g unsalted butter, softened
- 150g light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 180g all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 100g chopped walnuts
For the Orange Toffee Sauce:
- 100g unsalted butter
- 150g dark brown sugar
- 100ml double cream
- Zest and juice of 1 large orange
- 1 tsp vanilla extract
Instructions
- Prepare the dates by sprinkling them with baking soda and soaking in boiling water for 10-15 minutes.
- Chop the walnuts and set aside.
- Cream the softened butter and light brown sugar until light and fluffy, then add eggs one at a time and mix well.
- Stir in the vanilla extract and soaked dates with their liquid.
- In a separate bowl, whisk together flour, baking powder, and salt, then fold into the wet mixture gently.
- Add the chopped walnuts and fold until evenly distributed.
- Pour the batter into a prepared cake pan and smooth the top.
- Bake in a preheated oven at 170°C (340°F) for 50-55 minutes, checking for doneness with a skewer.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the sauce, melt butter in a saucepan, add dark brown sugar, and stir until dissolved.
- Pour in double cream, add orange zest and juice, and simmer for 3-5 minutes until thickened.
- Serve the cake with warm orange toffee sauce drizzled on top.
