A scrumptious recipe for Sticky Pear and Date Loaf with Warm Ginger Syrup, combining the sweetness of ripe pears and dates with a zesty ginger syrup.

- 1 1/2 cups (190g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon

- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar, packed
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1/2 cup (120ml) milk
- 1 cup (150g) chopped pitted dates
- 1 1/2 cups (180g) peeled and diced ripe pear
- 1/4 cup (60ml) boiling water
For the warm ginger syrup, you will need:
- 1/2 cup (100g) granulated sugar
- 1/2 cup (120ml) water
- 2 tbsp fresh ginger, finely grated
Instructions
- Prepare the ingredients by measuring out all dry and wet ingredients, chopping dates, and dicing pears.
- In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
- In a large mixing bowl, cream the butter and brown sugar until light and fluffy. Add eggs one at a time, then stir in vanilla and milk.
- Gradually add the dry mixture to the wet ingredients in three parts, folding in the dates and pears gently.
- Pour the batter into a prepared loaf pan and smooth the top. Bake in a preheated oven at 350°F (175°C) for 55 to 65 minutes.
- While the loaf is baking, prepare the ginger syrup by simmering sugar, water, and grated ginger until the sugar dissolves. Simmer for about 5 minutes.
