Ingredients

  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda

  • 1/4 tsp ground nutmeg

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) milk
  • 1 cup (150g) chopped pitted dates
  • 1 1/2 cups (180g) peeled and diced ripe pear
  • 1/4 cup (60ml) boiling water

For the warm ginger syrup, you will need:

  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (120ml) water
  • 2 tbsp fresh ginger, finely grated

Instructions

  1. Prepare the ingredients by measuring out all dry and wet ingredients, chopping dates, and dicing pears.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In a large mixing bowl, cream the butter and brown sugar until light and fluffy. Add eggs one at a time, then stir in vanilla and milk.
  4. Gradually add the dry mixture to the wet ingredients in three parts, folding in the dates and pears gently.
  5. Pour the batter into a prepared loaf pan and smooth the top. Bake in a preheated oven at 350°F (175°C) for 55 to 65 minutes.
  6. While the loaf is baking, prepare the ginger syrup by simmering sugar, water, and grated ginger until the sugar dissolves. Simmer for about 5 minutes.
