A delightful dessert that combines vibrant flavors of orange and saffron with a crunchy pistachio topping, perfect for any occasion.
Ingredients
Scale
- 1 cup (200g) granulated sugar
- 1/2 cup (120ml) olive oil or melted butter
- 3 large eggs
- Zest and juice of 2 oranges
- 1/2 cup (120ml) plain yogurt
- 1 1/2 cups (190g) all-purpose flour
- 1 cup (100g) almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
- 1/2 tsp saffron threads, soaked in 2 tbsp warm milk
For the syrup, you will need:
- 1/2 cup (100g) sugar
- 1/2 cup (120ml) orange juice
- 1 tbsp honey
- 1/4 tsp saffron threads
And for the pistachio crunch, gather:
- 1/2 cup (60g) pistachios, roughly chopped
- 2 tbsp sugar
- 1 tbsp butter
Instructions
- Preheat your oven to 350°F (175°C) and grease and line a round cake pan with parchment paper.
- In a large mixing bowl, beat the granulated sugar and olive oil (or melted butter) together until smooth. Add the eggs one at a time, mixing well after each addition.
- Stir in the yogurt, orange zest, orange juice, and saffron-infused milk.
- In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and a pinch of salt. Gently fold this dry mixture into the wet ingredients until just combined.
- Pour the batter into the prepared cake pan and bake for 35–40 minutes. Check for doneness with a skewer.
- While the cake is baking, prepare the syrup by simmering sugar, orange juice, honey, and saffron in a small saucepan until it thickens slightly.
- Once the cake is out of the oven, let it cool for a few minutes, then poke holes in the top and drizzle the syrup over it.
- Top the cake with the pistachio crunch before serving.
