Description

A delightful dessert that combines vibrant flavors of orange and saffron with a crunchy pistachio topping, perfect for any occasion.


Ingredients

  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) olive oil or melted butter
  • 3 large eggs
  • Zest and juice of 2 oranges
  • 1/2 cup (120ml) plain yogurt
  • 1 1/2 cups (190g) all-purpose flour
  • 1 cup (100g) almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1/2 tsp saffron threads, soaked in 2 tbsp warm milk

For the syrup, you will need:

  • 1/2 cup (100g) sugar
  • 1/2 cup (120ml) orange juice
  • 1 tbsp honey
  • 1/4 tsp saffron threads

And for the pistachio crunch, gather:

  • 1/2 cup (60g) pistachios, roughly chopped
  • 2 tbsp sugar
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and line a round cake pan with parchment paper.
  2. In a large mixing bowl, beat the granulated sugar and olive oil (or melted butter) together until smooth. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the yogurt, orange zest, orange juice, and saffron-infused milk.
  4. In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and a pinch of salt. Gently fold this dry mixture into the wet ingredients until just combined.
  5. Pour the batter into the prepared cake pan and bake for 35–40 minutes. Check for doneness with a skewer.
  6. While the cake is baking, prepare the syrup by simmering sugar, orange juice, honey, and saffron in a small saucepan until it thickens slightly.
  7. Once the cake is out of the oven, let it cool for a few minutes, then poke holes in the top and drizzle the syrup over it.
  8. Top the cake with the pistachio crunch before serving.
