Ingredients

  • 2 large eggs
  • 1/2 cup (150g) orange marmalade
  • 1 1/4 cups (160g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • Zest of 1 orange
  • 2 tablespoons milk
  • 1/4 cup (60ml) golden syrup (or light corn syrup)
  • 2 tablespoons orange marmalade
  • 1 tablespoon fresh orange juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line the bottom with parchment paper.
  2. Cream softened butter and brown sugar in a large bowl until light and fluffy.
  3. Add eggs one at a time, mixing well after each. Stir in orange marmalade.
  4. In a separate bowl, whisk together flour, baking powder, salt, and orange zest.
  5. Gradually mix the dry ingredients into the wet mixture, alternating with the milk. Mix until just combined.
  6. Pour the batter into the prepared loaf pan, smooth the top, and bake for 45–50 minutes until a toothpick inserted comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. While the cake cools, prepare the glaze by heating golden syrup, orange marmalade, and orange juice in a small saucepan until smooth and warm.
  9. Spoon the glaze over the warm cake and let it soak in before serving.
