  • 1 tsp baking powder

  • Zest of 1 large orange
  • 90g (3/4 cup) toasted walnuts, chopped
  • 120ml (1/2 cup) freshly squeezed orange juice
  • 100g (1/2 cup) brown sugar
  • 1 tbsp unsalted butter
  • Zest of 1 orange

Instructions

  1. Combine chopped pitted dates with boiling water and baking soda in a medium bowl and let sit for 15 minutes.
  2. Cream together softened unsalted butter and packed brown sugar in a large mixing bowl until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract and orange zest.
  4. In a separate bowl, whisk together flour, baking powder, ground cinnamon, and salt, then fold into the wet ingredients until just combined.
  5. Gently stir in softened dates with soaking liquid and chopped toasted walnuts.
  6. Preheat oven to 175°C (350°F) and grease an 8-inch square baking dish. Pour batter into the dish and smooth the top.
