Instructions
- Combine chopped pitted dates with boiling water and baking soda in a medium bowl and let sit for 15 minutes.
- Cream together softened unsalted butter and packed brown sugar in a large mixing bowl until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract and orange zest.
- In a separate bowl, whisk together flour, baking powder, ground cinnamon, and salt, then fold into the wet ingredients until just combined.
- Gently stir in softened dates with soaking liquid and chopped toasted walnuts.
- Preheat oven to 175°C (350°F) and grease an 8-inch square baking dish. Pour batter into the dish and smooth the top.
- Bake for 35 to 40 minutes, checking with a skewer for doneness.
- While baking, prepare the orange syrup by combining orange juice, brown sugar, unsalted butter, and orange zest in a saucepan and simmering for 5 minutes.
