Description
A moist and flavorful cake made with dates and oranges, topped with a warm clove syrup.

- 200g (1 ⅔ cups) all-purpose flour
- 150g (¾ cup) brown sugar
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cardamom
- ½ tsp ground cloves
- ¼ tsp salt
- Zest of 2 oranges
- 150g pitted dates, chopped
- 3 large eggs
- 120ml (½ cup) freshly squeezed orange juice
- 100ml (⅓ cup + 1 tbsp) vegetable oil
- 1 tsp vanilla extract
- 200g (1 cup) brown sugar
- 250ml (1 cup) water
- 3–4 whole cloves
- Juice of 1 orange
Instructions
- Prepare the dry ingredients by mixing flour, brown sugar, baking powder, baking soda, cardamom, cloves, and salt in a large bowl.
- Zest the oranges and chop the dates, then set aside.
- In a separate bowl, beat the eggs and mix in orange juice, vegetable oil, and vanilla extract.
- Combine the wet and dry ingredients, stirring gently, then fold in the dates and orange zest.
- Preheat the oven to 175°C (350°F) and prepare the baking pan.
- Pour the batter into the pan and bake for 40-45 minutes, checking for doneness with a toothpick.
- While the cake bakes, prepare the clove syrup by boiling brown sugar, water, cloves, and orange juice, then simmering for 10 minutes.
- Remove the cake from the oven, let it cool slightly, then prick the surface and pour the warm clove syrup over it.
- Allow the cake to cool completely before slicing and serving.
Notes
- Store the cake in an airtight container at room temperature for up to 3 days.
- Refrigerate for up to a week or freeze for up to 3 months.
- Experiment with different dried fruits or nuts for variations.
