  • 150g (¾ cup) brown sugar

  • ¼ tsp salt
  • 150ml (⅔ cup) molasses
  • 150ml (⅔ cup) milk
  • 100g (7 tbsp) unsalted butter, melted
  • 2 large eggs
  • 200g (1 cup) brown sugar
  • 100g (7 tbsp) unsalted butter
  • 250ml (1 cup) heavy cream
  • Zest of 1 orange
  • Juice of 1 orange
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 175°C (350°F) and grease an 8-inch baking dish, lining the bottom with parchment paper.
  2. Sift together the flour, baking powder, baking soda, ginger, cinnamon, cloves, nutmeg, and salt in a large bowl.
  3. In another bowl, whisk together the molasses, brown sugar, melted butter, milk, and eggs until smooth.
  4. Gradually pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Pour the batter into the prepared baking dish and smooth the surface.
  6. Bake for 35 to 40 minutes, checking for doneness with a skewer.
  7. Let the pudding cool in the dish for about 10 minutes before inverting onto a serving plate.
  8. For the citrus sauce, combine brown sugar, butter, and heavy cream in a saucepan over medium-low heat until dissolved.
  9. Add orange zest and juice, cooking for 8 to 10 minutes until thickened, then stir in vanilla extract.
  10. Drizzle the warm citrus sauce over the pudding and serve warm.
