- 1 cup (150g) pitted dates, chopped
- 3/4 cup (180ml) boiling water
- 1 tsp baking soda
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) brown sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 1/4 cups (160g) all-purpose flour
- 1 1/2 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1 tsp (4g) baking powder
- 1/4 tsp (1g) salt
- 3/4 cup (90g) chopped walnuts, toasted
For the Citrus Icing:
- 1 cup (120g) powdered sugar
- 1 tbsp fresh orange juice
- 1 tbsp fresh lemon juice
- 1 tsp orange zest
- 1/2 tsp lemon zest
Instructions
- Chop the pitted dates and soak them in boiling water with baking soda for 10 minutes.
- Toast the walnuts in a dry skillet over medium heat for about 5 minutes.
- Cream together the softened butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, ground ginger, ground cinnamon, ground cloves, baking powder, and salt.
- Gradually add the dry mixture to the wet batter, mixing until just combined.
- Fold in the soaked dates (with soaking liquid) and toasted walnuts gently.
- Pour the batter into a prepared cake pan and bake at 350°F (175°C) for 35 to 40 minutes.
- Let the cake cool in the pan for 15 minutes before transferring to a serving plate.
- Prepare the citrus icing by whisking together powdered sugar, orange juice, lemon juice, orange zest, and lemon zest until smooth.
- Drizzle the icing over the cooled cake and serve.
