Ingredients

  • 1 cup (150g) pitted dates, chopped
  • 3/4 cup (180ml) boiling water
  • 1 tsp baking soda
  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1 1/4 cups (160g) all-purpose flour
  • 1 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1 tsp (4g) baking powder
  • 1/4 tsp (1g) salt
  • 3/4 cup (90g) chopped walnuts, toasted

For the Citrus Icing:

  • 1 cup (120g) powdered sugar
  • 1 tbsp fresh orange juice
  • 1 tbsp fresh lemon juice
  • 1 tsp orange zest
  • 1/2 tsp lemon zest

Instructions

  1. Chop the pitted dates and soak them in boiling water with baking soda for 10 minutes.
  2. Toast the walnuts in a dry skillet over medium heat for about 5 minutes.
  3. Cream together the softened butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, ground ginger, ground cinnamon, ground cloves, baking powder, and salt.
  6. Gradually add the dry mixture to the wet batter, mixing until just combined.
  7. Fold in the soaked dates (with soaking liquid) and toasted walnuts gently.
  8. Pour the batter into a prepared cake pan and bake at 350°F (175°C) for 35 to 40 minutes.
  9. Let the cake cool in the pan for 15 minutes before transferring to a serving plate.
  10. Prepare the citrus icing by whisking together powdered sugar, orange juice, lemon juice, orange zest, and lemon zest until smooth.
  11. Drizzle the icing over the cooled cake and serve.
