Sticky Ginger Date Pudding with Orange Zest Syrup is a delightful dessert that combines rich, sticky dates with warm ginger spice, topped with a citrusy orange zest syrup.


Ingredients

  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 tsp ground ginger
  • ½ tsp ground cinnamon
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup (150g) chopped pitted dates
  • ¾ cup (180ml) boiling water
  • Zest of 1 large orange
  • ½ cup (120ml) fresh orange juice
  • ⅓ cup (110g) honey or golden syrup
  • ¼ cup (50g) granulated sugar
  • Zest of 1 orange

Instructions

  1. Chop the pitted dates and soak them in boiling water for about 10 minutes.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, ground ginger, and cinnamon.
  3. In a separate large bowl, cream the softened butter and light brown sugar until pale and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and orange zest.
  5. Fold in the soaked date mixture and gradually mix in the dry ingredients until just combined.
  6. Pour the batter into a prepared baking dish and smooth the top.
  7. Bake in a preheated oven at 350°F (175°C) for 35 to 40 minutes.
  8. While baking, prepare the orange zest syrup by combining orange juice, honey or golden syrup, granulated sugar, and orange zest in a saucepan and heating until the sugar dissolves.
  9. Once the pudding is done, poke holes in the surface and pour the syrup over it.
  10. Let it sit for a few minutes before serving, optionally with ice cream or whipped cream.
