- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- 1 tsp ground ginger
- ½ tsp ground cinnamon
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup (150g) chopped pitted dates
- ¾ cup (180ml) boiling water
- Zest of 1 large orange
- ½ cup (120ml) fresh orange juice
- ⅓ cup (110g) honey or golden syrup
- ¼ cup (50g) granulated sugar
- Zest of 1 orange
Instructions
- Chop the pitted dates and soak them in boiling water for about 10 minutes.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, ground ginger, and cinnamon.
- In a separate large bowl, cream the softened butter and light brown sugar until pale and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and orange zest.
- Fold in the soaked date mixture and gradually mix in the dry ingredients until just combined.
- Pour the batter into a prepared baking dish and smooth the top.
- Bake in a preheated oven at 350°F (175°C) for 35 to 40 minutes.
- While baking, prepare the orange zest syrup by combining orange juice, honey or golden syrup, granulated sugar, and orange zest in a saucepan and heating until the sugar dissolves.
- Once the pudding is done, poke holes in the surface and pour the syrup over it.
- Let it sit for a few minutes before serving, optionally with ice cream or whipped cream.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in the microwave or oven before serving.
- Can be frozen for up to 2 months; thaw in the fridge overnight before reheating.
