- 250 ml (1 cup) boiling water
- 1 tsp baking soda
- 100 g (1/2 cup) unsalted butter, softened
- 150 g (3/4 cup) brown sugar, packed

- 1 tsp vanilla extract
- 180 g (1 1/2 cups) all-purpose flour
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 100 g (1/2 cup) unsalted butter (for caramel sauce)
- 100 g (1/2 cup) brown sugar, packed (for caramel sauce)
- 120 ml (1/2 cup) heavy cream (for caramel sauce)
- 1 tsp vanilla extract (for caramel sauce)
Instructions
- Prepare the dates by chopping them and soaking in boiling water with baking soda for 10 minutes.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
- In a separate bowl, whisk together the flour, ground ginger, ground cinnamon, ground nutmeg, and salt, then fold into the butter mixture.
- Stir in the softened dates and their soaking liquid.
- Pour the batter into a greased 20×20 cm (8×8 inch) baking dish and smooth the top.
- Bake in a preheated oven at 175°C (350°F) for 30 to 35 minutes, checking with a toothpick for doneness.
- While the pudding is baking, prepare the caramel sauce by melting butter, adding brown sugar, and stirring in heavy cream and vanilla extract.

- Medjool dates are recommended for their softness and sweetness.
