Description

Sticky Ginger Date Pudding is a delightful dessert that combines the rich flavors of dates and ginger, topped with a luscious caramel sauce.

  • 250 ml (1 cup) boiling water
  • 1 tsp baking soda
  • 100 g (1/2 cup) unsalted butter, softened
  • 150 g (3/4 cup) brown sugar, packed
  • 2 large eggs (approx. 100 g)
  • 1 tsp vanilla extract
  • 180 g (1 1/2 cups) all-purpose flour
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 100 g (1/2 cup) unsalted butter (for caramel sauce)
  • 100 g (1/2 cup) brown sugar, packed (for caramel sauce)
  • 120 ml (1/2 cup) heavy cream (for caramel sauce)
  • 1 tsp vanilla extract (for caramel sauce)

Instructions

  1. Prepare the dates by chopping them and soaking in boiling water with baking soda for 10 minutes.
  2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, ground ginger, ground cinnamon, ground nutmeg, and salt, then fold into the butter mixture.
  5. Stir in the softened dates and their soaking liquid.
  6. Pour the batter into a greased 20×20 cm (8×8 inch) baking dish and smooth the top.
  7. Bake in a preheated oven at 175°C (350°F) for 30 to 35 minutes, checking with a toothpick for doneness.
  8. While the pudding is baking, prepare the caramel sauce by melting butter, adding brown sugar, and stirring in heavy cream and vanilla extract.
