Ingredients

  • 200g (1 ¼ cups) dried figs, chopped
  • 1 tsp baking soda
  • 250ml (1 cup) boiling water
  • 175g (1 ⅓ cups) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 100g (½ cup) unsalted butter, softened
  • 100g (½ cup) dark brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 80g (⅔ cup) chopped pecans
  • 150g (1 ¼ cups) powdered sugar
  • Zest of 1 orange
  • 23 tbsp freshly squeezed orange juice

Instructions

  1. Chop the dried figs and soak them in boiling water with baking soda for 10-15 minutes.
  2. In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. Cream the butter and brown sugar until light and fluffy, then add eggs one at a time and mix in vanilla.
  4. Add the soaked figs and their liquid to the butter mixture and combine well.
  5. Gently fold in the dry ingredients and chopped pecans until just combined.
  6. Pour the batter into a prepared cake tin and bake at 175°C (350°F) for 35-40 minutes.
  7. While the cake bakes, prepare the orange zest glaze by mixing powdered sugar, orange zest, and orange juice until smooth.
  8. Once the cake is slightly cooled, drizzle the glaze over it and let it set before slicing.
