A delicious and moist Sticky Fig Pecan Cake topped with a refreshing orange zest glaze, perfect for any occasion.
Ingredients

- 200g (1 ¼ cups) dried figs, chopped
- 1 tsp baking soda
- 250ml (1 cup) boiling water
- 175g (1 ⅓ cups) all-purpose flour
- 1 tsp baking powder
- ½ tsp ground cinnamon
- ¼ tsp salt
- 100g (½ cup) unsalted butter, softened
- 100g (½ cup) dark brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 80g (⅔ cup) chopped pecans
- 150g (1 ¼ cups) powdered sugar
- Zest of 1 orange
- 2–3 tbsp freshly squeezed orange juice
Instructions
- Chop the dried figs and soak them in boiling water with baking soda for 10-15 minutes.
- In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.
- Cream the butter and brown sugar until light and fluffy, then add eggs one at a time and mix in vanilla.
- Add the soaked figs and their liquid to the butter mixture and combine well.
- Gently fold in the dry ingredients and chopped pecans until just combined.
- Pour the batter into a prepared cake tin and bake at 175°C (350°F) for 35-40 minutes.
- While the cake bakes, prepare the orange zest glaze by mixing powdered sugar, orange zest, and orange juice until smooth.
- Once the cake is slightly cooled, drizzle the glaze over it and let it set before slicing.

- Ensure figs are soaked to add moisture to the cake.
- Avoid overmixing the batter for a tender texture.
