- 200g (1 cup) pitted dates, chopped
- 250ml (1 cup) boiling water
- 1 tsp baking soda
- 150g (3/4 cup) unsalted butter, softened
- 150g (3/4 cup) brown sugar
- 3 large eggs
- 1 tsp vanilla extract
- Zest of 1 orange
- 180g (1 1/2 cups) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
For the Pistachio Crumble, gather the following:
- 50g (1/2 cup) shelled pistachios, chopped
- 2 tbsp brown sugar
- 1 tbsp butter, melted
And for the Orange Syrup, you will need:
- 100ml (1/2 cup) fresh orange juice
- 50g (1/4 cup) sugar
Instructions
- Prepare the dates by placing chopped dates in a bowl and pouring boiling water over them. Stir in baking soda and let soak for 10-15 minutes.
- In a separate bowl, cream together softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and orange zest.
- Sift together flour, baking powder, and salt in another bowl. Gradually fold dry ingredients into the butter mixture, then fold in the soaked dates and liquid.
- Pour the batter into a prepared 8-inch round cake pan and sprinkle the pistachio crumble on top. Bake at 350°F (175°C) for 35-40 minutes.
- Prepare the pistachio crumble by mixing chopped pistachios, brown sugar, and melted butter in a small bowl.
- Once the cake is baked, pour the orange syrup over the warm cake and let it soak for about 10 minutes before serving.

- Store leftovers in an airtight container at room temperature for up to 3 days.
- Refrigerate for up to a week or freeze for up to 3 months.
