Description

Ingredients

  • 200g (1 cup) pitted dates, chopped
  • 250ml (1 cup) boiling water
  • 1 tsp baking soda
  • 150g (3/4 cup) unsalted butter, softened
  • 150g (3/4 cup) brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • 180g (1 1/2 cups) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

For the Pistachio Crumble, gather the following:

  • 50g (1/2 cup) shelled pistachios, chopped
  • 2 tbsp brown sugar
  • 1 tbsp butter, melted

And for the Orange Syrup, you will need:

  • 100ml (1/2 cup) fresh orange juice
  • 50g (1/4 cup) sugar

Instructions

  1. Prepare the dates by placing chopped dates in a bowl and pouring boiling water over them. Stir in baking soda and let soak for 10-15 minutes.
  2. In a separate bowl, cream together softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and orange zest.
  3. Sift together flour, baking powder, and salt in another bowl. Gradually fold dry ingredients into the butter mixture, then fold in the soaked dates and liquid.
  4. Pour the batter into a prepared 8-inch round cake pan and sprinkle the pistachio crumble on top. Bake at 350°F (175°C) for 35-40 minutes.
  5. Prepare the pistachio crumble by mixing chopped pistachios, brown sugar, and melted butter in a small bowl.
  6. Once the cake is baked, pour the orange syrup over the warm cake and let it soak for about 10 minutes before serving.
