Ingredients

  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup (115g) unsalted butter, softened
  • 1 cup (220g) pitted dates, chopped
  • 1 cup (240ml) boiling water
  • ¾ cup (150g) brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 1 large orange
  • Juice of 1 large orange
  • ½ cup (120ml) plain yogurt or sour cream

Instructions

  1. Soak the chopped dates in boiling water for about 10 minutes, then mash slightly.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. Cream the softened butter and brown sugar in a large bowl until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla, orange zest, and orange juice.
  5. Mix in the soaked dates and their liquid.
  6. Alternately add the dry ingredients and yogurt to the wet mixture, starting and ending with dry ingredients.
  7. Pour the batter into a prepared loaf pan and smooth the top.
  8. Bake in a preheated oven at 350°F (175°C) for 55 to 65 minutes, or until a toothpick comes out clean.
  9. Let the loaf cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve as desired.
