- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ cup (115g) unsalted butter, softened
- 1 cup (220g) pitted dates, chopped
- 1 cup (240ml) boiling water
- ¾ cup (150g) brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 1 large orange
- Juice of 1 large orange
- ½ cup (120ml) plain yogurt or sour cream
Instructions
- Soak the chopped dates in boiling water for about 10 minutes, then mash slightly.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
- Cream the softened butter and brown sugar in a large bowl until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla, orange zest, and orange juice.
- Mix in the soaked dates and their liquid.
- Alternately add the dry ingredients and yogurt to the wet mixture, starting and ending with dry ingredients.
- Pour the batter into a prepared loaf pan and smooth the top.
- Bake in a preheated oven at 350°F (175°C) for 55 to 65 minutes, or until a toothpick comes out clean.
- Let the loaf cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
- Slice and serve as desired.
