Ingredients
Scale
- 1 1/4 cups chopped pitted dates
- 1 cup boiling water
- 1 tsp baking soda
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp ground cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter (for sauce)
- 1 cup brown sugar (for sauce)
- 1 cup heavy cream
- 1/2 tsp cinnamon (for sauce)
- Pinch of salt (for sauce)
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch (20×20 cm) baking dish or deep round cake pan.
- Combine chopped dates and boiling water in a bowl. Stir in baking soda and let sit for 10 minutes to soften.
- Cream together softened butter and brown sugar until fluffy. Beat in eggs one at a time, then add vanilla extract.
- Whisk together flour, ground cinnamon, baking powder, and salt in a separate bowl.
- Gently stir dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Fold in the softened date mixture with water until evenly incorporated.
- Pour batter into prepared pan and smooth the top. Bake for 35–40 minutes until a toothpick comes out clean or with few crumbs.
- While baking, prepare sauce by melting butter over medium heat. Add brown sugar, heavy cream, cinnamon, and salt. Stir until smooth and simmer for 3–5 minutes until slightly thickened.
- Remove cake from oven and poke holes on top using a toothpick or fork.
- Pour half of the warm sauce over the cake and let it soak for 10 minutes.
- Serve warm, drizzled with remaining sauce and optionally topped with whipped cream or ice cream.
Notes
- Do not overmix batter after adding flour to keep cake tender.
- Use fresh baking powder and baking soda for best rise.
- High-quality dates enhance sweetness and texture.
- Let cake sit a few hours before serving to meld flavors.
- Optional: add chopped walnuts or pecans for texture.
- Store leftover sauce separately for best results.
