  • ¾ cup (150g) brown sugar
  • 2 large eggs
  • 1 cup (120g) grated carrot
  • 1 cup (160g) chopped dates
  • ½ cup (120ml) milk
  • 1 tsp vanilla extract

For the warm ginger sauce:

  • ½ cup (100g) brown sugar
  • ½ cup (120ml) water
  • 1 tbsp fresh grated ginger (or 1 tsp ground ginger)
  • 1 tbsp unsalted butter

Instructions

  1. Prep all ingredients by measuring, grating carrots, and chopping dates.
  2. Combine chopped dates with a splash of milk in a medium bowl and let sit for 10 minutes.
  3. Cream softened butter and brown sugar in a large mixing bowl until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in grated carrots and softened date mixture.
  4. In another bowl, whisk together dry ingredients: flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually fold into the wet mixture until just combined. Pour batter into a prepared loaf pan.
  5. Bake for 50 to 60 minutes, or until a toothpick inserted comes out clean. Let cool in the pan for 10 minutes, then drizzle with warm ginger sauce and cool completely before slicing.
