- ¾ cup (150g) brown sugar
- 2 large eggs
- 1 cup (120g) grated carrot
- 1 cup (160g) chopped dates
- ½ cup (120ml) milk
- 1 tsp vanilla extract
For the warm ginger sauce:
- ½ cup (100g) brown sugar
- ½ cup (120ml) water
- 1 tbsp fresh grated ginger (or 1 tsp ground ginger)
- 1 tbsp unsalted butter
Instructions
- Prep all ingredients by measuring, grating carrots, and chopping dates.
- Combine chopped dates with a splash of milk in a medium bowl and let sit for 10 minutes.
- Cream softened butter and brown sugar in a large mixing bowl until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in grated carrots and softened date mixture.
- In another bowl, whisk together dry ingredients: flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually fold into the wet mixture until just combined. Pour batter into a prepared loaf pan.
- Bake for 50 to 60 minutes, or until a toothpick inserted comes out clean. Let cool in the pan for 10 minutes, then drizzle with warm ginger sauce and cool completely before slicing.
