- 200g (1 cup) light brown sugar
- 100g (½ cup) unsalted butter, softened
- 2 large eggs
- 1 tbsp orange zest
- 1 tbsp lemon zest
- 1 tsp vanilla extract

- 1½ tsp baking powder
- ½ tsp ground cloves
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 120ml (½ cup) milk
- 100ml (⅓ cup + 1 tbsp) orange juice
- 1 tbsp lemon juice
- 75g (⅓ cup) caster sugar
- 3–4 whole cloves
- ½ tsp grated orange zest
Instructions
- Preheat your oven to 180°C (350°F) and grease a small baking dish or six ramekins.
- Cream together the light brown sugar and softened unsalted butter until fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the orange zest, lemon zest, and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, ground cloves, ground nutmeg, and salt.
- Gradually add the dry mixture to the wet ingredients, alternating with the milk, mixing just until combined.
- Pour the batter into the prepared baking dish or ramekins and smooth the top.
- Bake for 30 to 35 minutes, checking for doneness with a toothpick.
- While the cake bakes, prepare the Citrus Clove Syrup by simmering orange juice, lemon juice, caster sugar, whole cloves, and grated orange zest in a saucepan.
- Once the cake is done, pour the warm syrup over it and let it absorb before serving.
- Serve warm, optionally with vanilla ice cream or whipped cream.
