  • 200g (1 ½ cups) all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 120ml (½ cup) milk
  • 100ml (⅓ cup + 1 tbsp) orange juice
  • 1 tbsp lemon juice
  • 75g (⅓ cup) caster sugar
  • 34 whole cloves
  • ½ tsp grated orange zest

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a small baking dish or six ramekins.
  2. Cream together the light brown sugar and softened unsalted butter until fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the orange zest, lemon zest, and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, ground cloves, ground nutmeg, and salt.
  5. Gradually add the dry mixture to the wet ingredients, alternating with the milk, mixing just until combined.
  6. Pour the batter into the prepared baking dish or ramekins and smooth the top.
  7. Bake for 30 to 35 minutes, checking for doneness with a toothpick.
  8. While the cake bakes, prepare the Citrus Clove Syrup by simmering orange juice, lemon juice, caster sugar, whole cloves, and grated orange zest in a saucepan.
  9. Once the cake is done, pour the warm syrup over it and let it absorb before serving.
  10. Serve warm, optionally with vanilla ice cream or whipped cream.
