Description

Ingredients

  • 1 cup (150g) pitted dates, chopped
  • 1 cup (240ml) boiling water
  • 1 tsp baking soda
  • 1 1/2 cups (180g) grated carrots
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/4 cups (150g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • Pinch of salt

For the toffee glaze:

  • 1/2 cup (100g) light brown sugar
  • 1/4 cup (60ml) heavy cream
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. Cream together the butter and brown sugar until light and fluffy, then add eggs one at a time and mix well. Stir in vanilla.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Fold in the grated carrots and chopped dates until evenly distributed.
  6. Pour the batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Drizzle with toffee glaze before serving.
