- 1 cup (240ml) boiling water
- 1 tsp baking soda
- 1 1/2 cups (180g) grated carrots
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/4 cups (150g) all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- Pinch of salt
For the toffee glaze:
- 1/2 cup (100g) light brown sugar
- 1/4 cup (60ml) heavy cream
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.
- In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
- Cream together the butter and brown sugar until light and fluffy, then add eggs one at a time and mix well. Stir in vanilla.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Fold in the grated carrots and chopped dates until evenly distributed.
- Pour the batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Drizzle with toffee glaze before serving.
