A delicious and moist loaf made with ripe bananas, dates, and walnuts, topped with a zesty orange glaze.

- 3 ripe bananas, mashed (about 300g)
- 150g (1 cup) pitted dates, chopped
- 1 tsp baking soda
- 120g (½ cup) unsalted butter, softened
- 150g (¾ cup) light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 190g (1½ cups) all-purpose flour
- ½ tsp ground cinnamon
- ¼ tsp salt
- 80g (⅔ cup) chopped toasted walnuts
For the Orange Glaze:
- 150g (1¼ cups) powdered sugar
- 3 tbsp fresh orange juice
- Zest of 1 orange
Instructions
- Preheat your oven to 175°C (350°F) and grease a 22cm (9-inch) loaf tin.
- Soak the chopped dates with baking soda in 120ml of boiling water for about 10 minutes.
- In a separate bowl, sift together the all-purpose flour, ground cinnamon, and salt.
- Cream the softened butter and light brown sugar together until light and fluffy.
- Beat the eggs into the butter and sugar mixture one at a time, then stir in the vanilla extract and mashed bananas.
- Fold in the soaked date mixture and toasted walnuts.
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake for 50 to 60 minutes, checking for doneness with a skewer.
- Prepare the orange glaze by mixing powdered sugar, fresh orange juice, and orange zest until smooth.
- Once the loaf has cooled, drizzle the orange glaze over the top and let it set before slicing.
Notes
- Use very ripe bananas for the best flavor.
- Store leftovers in an airtight container at room temperature for 3-4 days.
- Freeze for up to 3 months if you want to keep it longer.
