Description

A delicious and moist loaf made with ripe bananas, dates, and walnuts, topped with a zesty orange glaze.


Ingredients

  • 3 ripe bananas, mashed (about 300g)
  • 150g (1 cup) pitted dates, chopped
  • 1 tsp baking soda
  • 120g (½ cup) unsalted butter, softened
  • 150g (¾ cup) light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 190g (1½ cups) all-purpose flour
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 80g (⅔ cup) chopped toasted walnuts

For the Orange Glaze:

  • 150g (1¼ cups) powdered sugar
  • 3 tbsp fresh orange juice
  • Zest of 1 orange

Instructions

  1. Preheat your oven to 175°C (350°F) and grease a 22cm (9-inch) loaf tin.
  2. Soak the chopped dates with baking soda in 120ml of boiling water for about 10 minutes.
  3. In a separate bowl, sift together the all-purpose flour, ground cinnamon, and salt.
  4. Cream the softened butter and light brown sugar together until light and fluffy.
  5. Beat the eggs into the butter and sugar mixture one at a time, then stir in the vanilla extract and mashed bananas.
  6. Fold in the soaked date mixture and toasted walnuts.
  7. Pour the batter into the prepared loaf tin and smooth the top.
  8. Bake for 50 to 60 minutes, checking for doneness with a skewer.
  9. Prepare the orange glaze by mixing powdered sugar, fresh orange juice, and orange zest until smooth.
  10. Once the loaf has cooled, drizzle the orange glaze over the top and let it set before slicing.

  • Use very ripe bananas for the best flavor.
  • Store leftovers in an airtight container at room temperature for 3-4 days.
