  • 150g (¾ cup) brown sugar
  • 1 tsp baking powder

  • ½ tsp baking soda

  • 2 large eggs
  • 120ml (½ cup) vegetable oil
  • 1 tsp vanilla extract
  • 50g (⅓ cup) crystallized ginger, chopped (optional)
  • 150g (¾ cup) brown sugar
  • 100g (7 tbsp) unsalted butter
  • 120ml (½ cup) heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 175°C (350°F) and prepare an 8-inch cake pan by greasing it and lining the bottom with parchment paper.
  2. Mash the ripe bananas in a bowl until smooth and set aside.
  3. In a large bowl, beat the eggs and brown sugar together until creamy. Stir in the mashed bananas, vegetable oil, and vanilla extract until well combined.
  4. In another bowl, sift together the flour, baking powder, baking soda, ground ginger, and salt. Gradually fold this dry mixture into the wet ingredients until just combined.
  5. Pour the batter into the prepared cake pan and smooth the surface. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. In a saucepan, melt the unsalted butter and brown sugar over medium heat, stirring frequently. Add the heavy cream and vanilla extract, stirring until the sauce thickens slightly (about 5 minutes).
  8. Slice the cooled cake and drizzle the warm brown sugar sauce over each piece before serving.
