- 120ml (½ cup) vegetable oil

- 100g (7 tbsp) unsalted butter
- 120ml (½ cup) heavy cream
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 175°C (350°F) and prepare an 8-inch cake pan by greasing it and lining the bottom with parchment paper.
- Mash the ripe bananas in a bowl until smooth and set aside.
- In a large bowl, beat the eggs and brown sugar together until creamy. Stir in the mashed bananas, vegetable oil, and vanilla extract until well combined.
- In another bowl, sift together the flour, baking powder, baking soda, ground ginger, and salt. Gradually fold this dry mixture into the wet ingredients until just combined.
- Pour the batter into the prepared cake pan and smooth the surface. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- In a saucepan, melt the unsalted butter and brown sugar over medium heat, stirring frequently. Add the heavy cream and vanilla extract, stirring until the sauce thickens slightly (about 5 minutes).
- Slice the cooled cake and drizzle the warm brown sugar sauce over each piece before serving.
