- 1/2 cup (120ml) boiling water

- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar
- 2 large eggs

- 1 cup (120g) all-purpose flour
- 1/2 cup (60g) almond flour
- 1 tsp baking powder
- 1/2 tsp ground cardamom
- Pinch of salt
For the Citrus Drizzle:
- 1/2 cup (100g) granulated sugar
- 1/2 cup (120ml) fresh orange juice
- 1 tbsp lemon juice
- 1 tsp orange zest
Instructions
- Prepare the apricots by soaking them in boiling water and adding baking soda. Let sit for 10 minutes, then drain.
- Sift together the all-purpose flour, almond flour, baking powder, ground cardamom, and salt in a mixing bowl.
- Cream the softened butter and brown sugar until light and fluffy, then add eggs one at a time and mix well. Stir in vanilla extract.
- Fold the softened apricots and their liquid into the butter mixture, then gradually add the dry ingredients, mixing until just combined.
- Preheat the oven to 350°F (175°C) and pour the batter into a prepared cake pan. Bake for 35-40 minutes, or until a skewer comes out clean.
- Prepare the citrus drizzle by simmering sugar, orange juice, lemon juice, and orange zest until thickened. Pour over the warm cake after baking.
