  • 2 large eggs

  • 1 cup (120g) all-purpose flour
  • 1/2 cup (60g) almond flour
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • Pinch of salt

For the Citrus Drizzle:

  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (120ml) fresh orange juice
  • 1 tbsp lemon juice
  • 1 tsp orange zest

Instructions

  1. Prepare the apricots by soaking them in boiling water and adding baking soda. Let sit for 10 minutes, then drain.
  2. Sift together the all-purpose flour, almond flour, baking powder, ground cardamom, and salt in a mixing bowl.
  3. Cream the softened butter and brown sugar until light and fluffy, then add eggs one at a time and mix well. Stir in vanilla extract.
  4. Fold the softened apricots and their liquid into the butter mixture, then gradually add the dry ingredients, mixing until just combined.
  5. Preheat the oven to 350°F (175°C) and pour the batter into a prepared cake pan. Bake for 35-40 minutes, or until a skewer comes out clean.
  6. Prepare the citrus drizzle by simmering sugar, orange juice, lemon juice, and orange zest until thickened. Pour over the warm cake after baking.
