Description

A delicious and visually appealing cake made with dried apricots and almonds, topped with a honey drizzle.


Ingredients

  • 1 cup (150g) dried apricots, chopped
  • 1/2 cup (120ml) orange juice (or water)
  • 1 cup (120g) ground almonds (almond flour)
  • 1/2 cup (65g) chopped almonds, toasted
  • 1 cup (130g) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar
  • 2 large eggs
  • 1/2 cup (120ml) plain yogurt
  • 1 tsp vanilla extract

For the honey drizzle, you will need:

  • 1/3 cup (80ml) honey
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your cake pan.
  2. Chop the dried apricots and toast the chopped almonds.
  3. In a bowl, mix the all-purpose flour, ground almonds, baking powder, and salt.
  4. Cream the butter and brown sugar until fluffy, then add eggs, yogurt, and vanilla.
  5. Fold in the dry ingredients and the apricots and almonds.
  6. Pour the batter into the prepared pan and bake for 40-45 minutes.
  7. Prepare the honey drizzle by warming honey and lemon juice in a saucepan.
  8. Once the cake is baked, drizzle the honey mixture over it while warm.
  9. Let the cake cool before serving.

  • Can be refrigerated for up to a week or frozen for up to 3 months.
