Description
A delicious and visually appealing cake made with dried apricots and almonds, topped with a honey drizzle.
Ingredients

- 1 cup (150g) dried apricots, chopped
- 1/2 cup (120ml) orange juice (or water)
- 1 cup (120g) ground almonds (almond flour)
- 1/2 cup (65g) chopped almonds, toasted
- 1 cup (130g) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar
- 2 large eggs
- 1/2 cup (120ml) plain yogurt
- 1 tsp vanilla extract
For the honey drizzle, you will need:
- 1/3 cup (80ml) honey
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and prepare your cake pan.
- Chop the dried apricots and toast the chopped almonds.
- In a bowl, mix the all-purpose flour, ground almonds, baking powder, and salt.
- Cream the butter and brown sugar until fluffy, then add eggs, yogurt, and vanilla.
- Fold in the dry ingredients and the apricots and almonds.
- Pour the batter into the prepared pan and bake for 40-45 minutes.
- Prepare the honey drizzle by warming honey and lemon juice in a saucepan.
- Once the cake is baked, drizzle the honey mixture over it while warm.
- Let the cake cool before serving.

- Store in an airtight container at room temperature for up to 3 days.
- Can be refrigerated for up to a week or frozen for up to 3 months.
