Description

A delightful recipe for spooky eyeball macarons, perfect for Halloween celebrations.

Ingredients

  • Almond Flour: 120 grams
  • Powdered Sugar: 200 grams
  • Egg Whites: 100 grams (about 3 large eggs)
  • Granulated Sugar: 100 grams
  • Cream of Tartar: 1/2 teaspoon
  • Vanilla Extract: 1 teaspoon
  • Butter: 200 grams, softened
  • Additional Powdered Sugar: 250 grams (for filling)

Instructions

  1. Sift together the almond flour and powdered sugar in a large bowl and set aside.
  2. In a clean mixing bowl, beat the egg whites and cream of tartar until frothy, then gradually add granulated sugar and whip until stiff peaks form. Divide into two bowls and add green and red gel food coloring to each.
  3. Fold the colored egg whites into the sifted almond flour and powdered sugar mixture until it reaches a lava-like consistency. Pipe small circles onto lined baking sheets and let rest for 30-60 minutes.
  4. Prepare the buttercream filling by beating softened butter, powdered sugar, and vanilla extract until smooth and fluffy.
  5. Once the macarons are cooled, assemble them by piping buttercream onto one shell and topping with another. Decorate with candy eyeballs and edible glitter.

Notes

  • Always sift your almond flour and powdered sugar to avoid lumps.
  • Be gentle when folding the batter to prevent deflation.
  • Let the piped macarons rest until a skin forms for the perfect texture.
  • Preheat your oven to the correct temperature to avoid cracking.
  • Use a kitchen scale for accurate measurements.
